According to the National Restaurant Association's third annual What's Hot chef survey, the top five 2009 trends according to chefs nationwide will be:
1. Locally grown produce (89 percent)
2. Bite size mini desserts (83 percent)
3. Organic produce (82 percent)
4. Nutritionally balanced children's dishes (81 percent)
5. New/fabricated cuts of meat (78 percent)
The survey polled 1600 American Culinary Federation chefs who were asked to rank 210 items as hot trend, yesterday's news, or perennial favorite.
