While The Meat House has the feel of a neighborhood butcher, make no mistake about it-this is a business with a growing national footprint. What started as a high-end butcher shop in Portsmouth in 2003 is now a franchise with 31 locations in California, Connecticut, Florida, Maine, Massachusetts, NH, New York, North Carolina, Oklahoma and Texas.
While other retailers were slammed by the recession and forced to lay off employees and close shop, The Meat House grew. We had sales increase across our stores, says CEO and co-owner Justin Rosberg, adding that people ate out less but prepared more meals at home. He attributes the company's success to knowing what kind of business they are in-namely, not the meat business, but hospitality. The Meat House is focused on creating a full customer experience, including stocking local products and bringing in new products at customers' requests. We're a hospitality company in a retail setting, Rosberg says.
Franchising has driven the company's growth during the recession says Rosberg, as has finding new sources of in-store revenue, such as making fresh sandwiches. Since Rosberg and his partner Jason Parent did not have experience with franchising, they hired people with tremendous depth in franchising and put them in key roles, Rosberg says. They are looking to add five more stores by the end of this year, and another 15 to 25
in 2013.
Each store manager makes his or her own decisions about products. We're not sending out menus for people to replicate. It's about the experience, Rosberg says. We're monitoring that customers have the best experience inside the store.
